Day 2: Ay yi yi.

OK, It's ONLY day 2, so we're doing fine with the meals- here's my issue... I have already run out of bread! Dang! I know eggs will be soon to follow- and applesauce. Argh. I didn't plan for this adventure- I just decided. It's already starting to show.

I have the bread machine, so I guess I can use that- I guess I can figure out how to MAKE applesauce? But dang- I don't have chickens in the backyard. What will I do about eggs? Maybe I can ask for a dozen for Valentine's Day...

So, dinner last night was:
Chicken
Orange slices
Steamed apples
Macaroni and Cheese

I ate the leftover chili.

Dad's away on business, so Grandma (who is here to help me- thank goodness!) and I can get away with some random meals!

You know I'm not all organic or anything (not sure if the organic ones last as long) - but I bought eggs the last week of January at BJs and they don't expire until March 2nd. I never thought of "stocking up on eggs" but I guess you could since they seem to not expire for about 6 weeks. That seems so gross though.

Good luck! This is interesting! Oh and Oprah today at 4 is about people who save a gazillion dollars on everything. Not sure if the rugrats will let me watch it!

Can you get eggs from your CSA? Sometimes they have a package deal... or your milk supplier? Making applesauce is easy. And with a bread maker, bread will be easy. Just have to make sure you have all the baking ingredients!

For eggless baking, look up some vegan recipes - you can bake some surprisingly fluffy cakes and quick breads without eggs! :-) The eggs are usually replaced with vinegar and baking powder. Lower fat, too!

I would think that you could order eggs from the same place you get your milk. Maybe? Maybe not? How about sending your mom to the store? It was her idea to forgo shopping for the month right??!

i went vegan for a while and i've got a box of egg replacer powder. (doesn't help for scrambled eggs, but can help make cake. mmm, cake!)
i think you can use mushed up banana as an egg replacer, too. are you out of bananas yet?

also: grandma has a blog? with pics and video? DANG!
